    Method

      Cut the cherry tomatoes in half and place in a small bowl. Toss with 1 teaspoon of olive oil, season to taste and then set aside until ready to use.

      Cut the bagel in half and spread both sides with Philadelphia. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint. Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil and a squeeze of fresh lemon.
